SUMMARY:Tour: Wetland\, Permaculture and Building with Straw
DESCRIPTION:We are offering a tour of our burgeoning permaculture farm followed by afternoon herbal teas and home made treats.  \nWe are on 15 acres in Blampied between Daylesford and Ballarat.  \nWe began establishing our property on permaculture principles four years ago.  \nI completed a permaculture design certificate with the wonderful Su Dennett and David Holmgren in my twenties and aspire to practice the principles of permaculture as much as possible on our new property ORTO.\nWe are halfway along our permaculture journey. Some things we are doing very well\, while other areas can be improved and are only inhibited by a lack of consensus.\nAs an individual and as a family the opportunities for creating a sustainable world are many.  But we will also discuss some of the barriers towards sustainability imposed by a lack of collective critical mass towards a much\, much more ecologically nurturing and respectful world.\nWe are at the beginning of our journey on this property and want to share our beginning with you. Most of our trees are still babies\, our fruit orchard is in its in infancy too. But there is already so much to share with you.  \nWe Will Visit Our \nBerry orchard\nFruit tree orchards\nHeritage Chickens and discuss livestock conservancy (even domestic animals are in danger of becoming extinct). \nKitchen Garden Orto One\nKitchen Garden Oto Two\nRevegetation projects \nBiodiversity Plan\nBee garden\nStraw home  \nHarvest room\nGreenhouse\nOur farm stay \nWalk behind tractor  – if you are planning to grow lots of food and or want to start a market garden.\nIn December when this tour takes place we will have only just transplanted our summer vegetable garden.\nWe are in a cool temperate climate and our summer season is short.  \nOur aim is to grow lots of our own food and to barter and sell excess. We always plant more than we need. In our first growing season we harvested 700kg of tomatoes and the following years 300kg of eggplants. Each year we grow a variety of vegetables with one or two types in excess for preserving.\nWe encourage you to ask lots of questions as we really love to share what we know.\nWe believe that permaculture increases community resilience\, boosts and supports biodiversity\, and empowers individuals to create healthy and extremely meaningful lives.  \nWe look forward to meeting you very much.\nArrivederci\, mara

SUMMARY:Vegan Soap Lard Soap Making Class
DESCRIPTION:This class will allow you to make soap from any oil or fat or from a combination of oils and fats of your choice. It will explain both hot and cold soap process making and how to use digital soap making calculators. \nWe will make two soap batches: One vegan and the other from lard. \nI started making soap when my neighbour a female butcher and academic\, who raises pigs on pasture\, shared a few kilos of beautiful white pork lard with me. \nI realised that day\, that as she lived close and as she would have an ongoing supply of lard for sale\, it would be extremely easy for me to start making my own soap. \nOver the past five years I have therefore not bought a single bar of soap. Soap making has become an addictive\, practical and very useful skill. I have been using my home made soap to wash my dishes\, my hair and body. I add homemade lavender oil to the mix to produce a very beautiful bar of soap. \nThe process of making soap is extremely easy\, it takes time and care\, but the basic principles are straightforward. It is easy to make beautiful soap from your home. \nWhile lard might not seem like a great choice for vegetarians\, for me it is the best choice. It is locally produced five minutes from my home\, it is produced in excess and if not used could potentially go to waste. I could use olive oil and coconut oil\, but they are not as readily available to me as lard. Coconut oil is produced overseas where I have no connection to where it is grown\, who it is grown by and what the conditions are for humans or animals. \nWhether making soap from vegetable oils or lard the process is exactly the same. \nSince making my own soap I have also not bought a single bottle of dishwashing detergent. This has meant that I no longer breathe in the many chemicals used in these products. \nJoin me for this wonderful soap making class and learn to: \nRender lard\nWork with coconut oil and olive oil\nRemove impurities\nUse an online soap making calculator to create your own recipes\nCarefully use lye\nHow to mix\, saponify and reach trace \nWe will discuss both hot and cold processes soap making\, but we will only do cold process soap making on the day. \nWe will explore various readily available colouring ingredients such as cocoa\, calendula and corn flowers and clays. \nWe will use essential oils and discuss the importance of using these oils in moderate amounts. \nWe will work together and take turns weighing various ingredients and mixing two bathches of oils to make one vegan soap and one lard soap. \nThe oil once saponified will be poured into two soap moulds. \nThe soap made on the day of the class will remain to cure but you will be able to take home one bar of soap either vegan or from lard. \nAll ingredients and tools will be provided. SUMMARY:Preserving for beginners
DESCRIPTION:I love foraging\, I love growing and I want to make the very most of what I find and what I grow. \nPreserving for beginners offers all the skills needed to preserve the taste of summer\, the cool of winter and the red of autumn.  \nThis class is jam packed with information.  \nIn many preserving classes you are taught one recipe and one way to preserve.  \nBut in this class I am showing you many techniques: from fermenting\, to dehydrating\, to hot water bathing and the difference between the Fowlers method and the hot water bathing method.  \nI will teach you both slow and fast ferments\, how to dehydrate\, raw pack and hot pack preserving. How to make jams and jellies and fruit leathers. It is effectively five classes in one.  \nIt will also be a small group of us (6)\, hence the price\, small class\, packed with information\, lots of opportunities to ask questions and to delve into your favourite preserving method.  \nThe wonderful thing about a class like this is that it can help people understand differences that often cause confusion: for example why do fowlers have a set 60min heating setting on their recipes while many recipes require far less time to preserve foods.  \nWhy is fermenting the exact opposite of preserving: fermentation extends the shelf life of food\, but why does it not last as long as preserved foods and why would you want to encourage bacterial growth in a ferment when you want the exact opposite in a preserve…and which method would you choose: ferment\, dehydrate\, preserve\, jam jelly or leather? By having many tools at your fingertips the world of food preserving becomes ever more liberating because you can choose to change and swap according to what is happening in the kitchen\, and what you are in the mood for. \nFrom preserving wild fungi\, to bottling vibrant red tomatoes. Drying cherries and strawberries and tomatoes to making jam and fruit leathers.  \nYou can ferment\, or coat in honey or slow ferment black garlic. \nI will introduce you to high pressure preserving too. \nWe will explore range of preserving tools and skills underpinned by the principles that ensure longevity\, safety and deliciousness. \nWe will use pH strips to test acidity and learn why pH is an important indicator.  \nHeat and time\, acidity\, salt and sugar\, these are your friends in the kitchen\, and with them you can preserve to your hearts content.  \nThis will be a demonstration class allowing me to take you through hot water bath preserving\, dehydrating\, fermenting\, tips on jam making and high pressure cooking. \nThere will be opportunities for some hands on work and lots of opportunities for discussion and questions. \nI will show you a range of digital resources and books that will help you find recipes or allow you to  create your own recipes. \nI look forward to meeting you very much!
