Learn to make sausages with beautiful free-range pork.

Join Adam and I, Mara, for a wonderfully instructive, joyous and vibrant, sausage making workshop and feast at ORTO Farm, Blampied, Victoria, just outside of Daylesford.
We will start by meeting at Jonai Farm, a free range pig farm, where Adam lives and works , to show you pigs on pasture, to chat about all things regenerative farming and the ethics of raising animals in paddocks instead of sheds. We will talk about how Jonai farm source their nutrient rich ‘waste stream’ feed from various local networks to grow excellent pork.
Then a short drive to ORTO Farm, where hot drinks and cake will await you. ORTO is where where Adam will present a butchering demonstration, breaking down a pork shoulder and turning it into delicious homemade sausages. For this workshop we have sourced our pig from Allt Farm in Beechworth where Farmer Hanna also raises free range pigs (because all of Jonai’s pigs are accounted for).
Then with our freshly made sausages in hand, let’s cook together and chiacchierare (chit chat), surrounded by beautiful Italian music, a glass of wine and some tiramisu! At the very end with our bellies very full, I would like to facilitate a simple end of feast tarantella dance. With the emphasis on simple, don’t be shy, because I will guide you, I will keep it very slow with the focus being on togetherness and good digestion!
